Ingredients

→ For the Crust

01 All-purpose flour
02 Unsalted butter
03 Shortening
04 Ice water
05 Salt

→ For the Filling

06 Apples
07 Granulated sugar
08 Brown sugar
09 Ground cinnamon
10 Ground nutmeg
11 All-purpose flour
12 Lemon juice
13 Butter

Instructions

Step 01

Whisk together flour and salt. Cut in the COLD butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Don't overmix! Wrap in plastic wrap and chill for at least 30 minutes.

Step 02

In a large bowl, combine sliced apples, sugars, cinnamon, nutmeg, flour, and lemon juice. Toss everything gently until the apples are evenly coated.

Step 03

Preheat oven to 375°F (190°C). Roll out half of the chilled dough and fit it into a 9-inch pie plate. Pour the apple filling into the crust. Dot with butter pieces. Roll out the remaining dough and either cover the pie completely or create a lattice top. Crimp the edges.

Step 04

Bake for 45–55 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover it loosely with foil.

Step 05

Let the pie cool completely on a wire rack before slicing and serving.

Step 06

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  1. Chill the dough thoroughly for a flaky crust.
  2. Store leftover pie in the refrigerator for up to 3 days.
  3. If you don't have shortening, you can use all butter, but the crust won't be quite as flaky.
  4. Serve warm with a scoop of vanilla ice cream – it's the best!
