Ingredients

→ Main Ingredients

01 4 bone-in, skin-on chicken thighs
02 3 cups chicken stock
03 1 sheet puff pastry

→ Veggies

04 1 cup diced carrots
05 1 cup frozen peas
06 1 diced onion

→ Creamy Base

07 1/2 cup butter
08 1/2 cup flour
09 1/2 cup heavy cream

→ Flavor Boosters

10 2 tbsp fresh thyme
11 1 tsp garlic powder
12 Salt and pepper to taste

Instructions

Step 01

Season thighs with salt, pepper, and thyme. Roast at 375°F for 35 min until golden. Let cool, then shred.

Step 02

Sauté onions in butter until soft. Add carrots, cook 5 min. Stir in flour to make roux.

Step 03

Whisk in stock, then cream. Simmer until thickened. Stir in chicken and peas.

Step 04

Pour filling into baking dish. Top with pastry. Brush with egg wash if desired.

Step 05

Bake at 400°F for 25-30 min until golden and bubbling.

Step 06

Let cool 10 min before serving - filling sets as it cools.

Notes

  1. Par-cook carrots unless you like extra crunch
  2. Let filling cool slightly before adding pastry
  3. Freezes beautifully before baking
  4. Perfect with a simple green salad
